Brut IPAは糖分由来の甘みをほとんど持っていないため、苦味を通常のビールよりも感じやすく、またボディも薄くなりがちです。そんな点を補うため、「POCKET」は多量のホップを使用しながらも、その大半をドライホップに使用することで苦さを抑えました。また、水質調整や、小麦を加えることによってスムースな口当たりに仕上げています。既存のこのビアスタイルのイメージに囚われず、これまでの奈良醸造の知見も活かしながらBrut IPAをいま造るとどうなるか、ということに挑戦してみました。

頭文字に「C」を持つ、柑橘のような香りが特徴的なホップはまとめて『C系ホップ』と呼ばれますが、今回はそんな中からCashmere、Citra、Centennialをチョイス。このホップを様々なタイミングで投入することで、それぞれの持つ香りを引き出しています。ちなみにCashmereは奈良醸造として初めて使用したホップ。メロンやハーブのような清涼感のある香りをこのビールにもたらしています。

グラスに注ぐとライムゼストのような柑橘の香りが漂い、一口飲むとグレープフルーツのような柑橘の香りとわずかな苦みが感じられます。少し温度が上がると、グアバのようなトロピカルフルーツの香りも感じられ、アルコール由来の甘さと、わずかにハーブのような香りが最後に楽しめます。

こうして出来上がった「POCKET」、クリアなゴールドカラーにスムースな飲み口はまさにスパークリングワインのよう。バーベキュー料理などと合わせて飲むと、柑橘の香りとドライなボディ、強めにかけた炭酸が口の中をリフレッシュしてくれるでしょう。

Introducing POCKET, a Brut IPA that's dry yet aromatic, featuring exclusively American C-hops known for their citrus character.

Among the many IPA variations, Brut IPA stands out for its extreme dryness. "Brut" means "dry" in champagne terms—enzymes eliminate almost all sugars, creating an exceptionally dry beer. This style, established by a San Francisco brewery in 2017, has become rare in today's craft beer scene, partly due to the challenge of balancing such dry beers.

Without sugar-derived sweetness, Brut IPAs can feel overly bitter and thin-bodied. To address this, POCKET uses abundant hops but primarily as dry hops to minimize bitterness. We also adjusted water chemistry and added wheat for smooth mouthfeel, applying our brewing knowledge to reimagine this challenging style.

We selected three C-hops: Cashmere (our first time using it), Citra, and Centennial. Cashmere brings melon and herbal notes, while the blend creates complex citrus aromatics.

Expect lime zest aromas upfront, grapefruit citrus and mild bitterness on the palate, with guava tropical notes and herbal hints emerging as temperature rises. The clear gold color and smooth texture resemble sparkling wine—perfect with BBQ as the citrus and dry body refresh your palate. POCKET completes our IPA series where each brewer contributed a recipe: DOT, LINE, FACE, and now POCKET by brewer Sakuma. You might notice the naming pattern! These represent our "Joy of Choosing Beer" motto, with FACE and POCKET being polar opposites in alcohol, flavor, and brewing approach.
